Here's How To Make A Rock Star Fondue
With plenty of vintage cave aged cheddar from Snowdonia Cheese Company
Recipe: A Rock Star Fondue
Nothing says autumn like a delicious stringy, oozy cheese fondue. Just add your favourite dippers.
Ingredients
150g Snowdonia Rock Star cheese
200g Paxton’s Gruyere Premier Cru, grated
1 dessertspoon cornflour
175ml dry white wine such as Fortnum's Bordeaux Blanc Sec
Freshly ground black pepper
Freshly ground nutmeg
1 clove garlic, peeled and halved
Cruditès – mini cornichons, celery sticks, radishes and carrots. Don’t forget the bread and hams too.

Method
Place the grated cheeses in a large bowl and toss in cornflour, making sure all the cheese is evenly coated. Season with pepper and nutmeg.
Warm up the white wine in a non-stick pan until hot. Gradually add the cheese, whisking constantly.
When all the cheese has been added, bring to a gentle bubble and whisk until smooth and glossy.
Rub the cut surface of the garlic lightly around your fondue dish and discard.
Pour in your fondue and serve immediately. Keep fondue warm to stop it getting too thick.
Serve with crusty bread, crisp chunks of apple and crudités.
